Creamy Mac n Cheese



I really wouldn't even say this Mac n Cheese has ever been an actual recipe per say. Just a little of this...alot of that...and a pinch of whatever else. No, in all seriousness..I actually had to compose the recipe tonight.

This evening, it was my pleasure to send a big bowl of creamy goodness to my neighbor, Ben. I make Creamy Mac n Cheese for Ben every year..for his birthday. Ben turned 16 this week and I am so happy and proud of him. He is a fine young man.

When he was in 1st grade, I taught his Sunday school class. Ben is now 16 and driving. It seems like yesterday.

Creamy Mac n Cheese

Start by boiling your water in a large stockpot. Add about 1 tblsp salt to the water. Prepare pasta according to package directions.
Drain noodles and do not rinse. Pour the noodles back into your stockpot.

Cut your cheese in chunks. (You will use 1 small package of Velveeta and 1/4 of another small package)



Add cheese and milk to your noodles.



Keep your heat on medium to medium-low. You don't want it to boil. You want the cheese to gradually melt. Stirring frequently. Please don't stir vigorously or your mac n cheese will turn to mush.



It should take the cheese approximately 8-10 minutes to melt. Once the cheese has melted completely, turn it to a simmer to keep warm. The longer the mac n cheese sits...the more it will thicken. If you need to add more milk, feel free.
Dump into a big serving dish.




This mac n cheese has been made for numerous family get-to-gethers, dinner guests, potlucks, for girls night, and Bunco. MANY people have requested this recipe on numerous occasions and I owe y'all an apology. I am sorry I didn't put this recipe on paper for y'all sooner.

1 box of elbow macaroni (1 lb.)
20 oz. of Velvetta cheese (cut in chunks)
2 1/2 to 3 c milk
salt to taste
